Greatest text about cooking I have ever read. It's both logical and fun and so the lessons will stick. I would call it perfectly balanced, such as a great meal. Following reading the first several pages, I went poking around, only to discover that I was invited back to the beginning (XO). An individual see, the book is about the " trip, not the destination. " It's clever, witty, helpful, intuitive, and altogether a pleasure to read., I recently read this cover to cover and felt compelled to write a review. This specific is really an essential publication to everyone's library. I actually like to cook and have an attractive collection of cookbooks, but this one is truly special. Samin is a lovely writer. She exudes warmth and humor in her stories and it flows in such a way that you neglect you are reading a combo of a cookbook/science textbook. Samin breaks down the importance of salt, fat, acid and heat. It can not just recipes but you may be wondering what, why and how. She would not talk down to the girl readers. She is uncomplicated, enthusiastic and fun. I have always loved the " why" in cooking and baking (like the Cooks Illustrated approach and  The Food Lab: Much better Home Cooking Through Technology ) - but I love that she narrows it down to four basic elements. I actually personally like talking about quality recipes, especially for dishes I actually don't cook on a weekly basis. But this books and others, like  Ratio: The Basic Codes Behind the Art of Everyday Cooking   are important because they provide you with the tools to innovate and recipes become starting points. I wish I had this publication twenty years ago when I actually started seriously cooking. It is like a inhale of fresh air and incredibly inspiring. So pleased for this addition to my home library and can't wait to prepare dinner tomorrow!, This is a publication an individual sit down and read.... not peruse... but read straight through. Not only are the forward and introduction inspiring, but Part One on SALT had me totally hooked. That i knew of that salt was important in cooking, but now I understand so much more about what it will to make food flavor delicious.

So much more than a collection of recipes, it gets to the heart of cooking. Why we want to be better cooks AND how to do that. I really like the fold out on p. 193 " what must i cook" that advises to go back and read the book through before you practice... a brilliant observation that the book is about " the journey, not the destination" similar to so many things we follow and experience.

Samin is a wonderful storyteller and Wendy's illustrations add another layer to this important book. You'll keep this book on your bedroom table first... then move it to your kitchen as a reference likely to use for years to come. Don't let this one get away!, I like to read cookbooks... And this one is well done. A girl can desire can't she? I like the easiest way the fundamentals of cooking are explained in Salt Fat Acid Heat. You can't go wrong with this guide to cooking., I love understanding the elements behind cooking. The science is interesting and the writing is brilliant and easy to break down. I additionally enjoyed the representation., Equal parts story, cooking theory and recipes, this is not your average cookbook. If you love cooking, this is a book to read from beginning to end, such as a book. I'm a decent make, but I'm humbled by how much I don't know after reading this. In addition to oh by the way, it's beautifully designed and illustrated!, The lessons discovered have paid dividends., excellent teaching book
